in a much-talked-about foodie event in south florida, bulla gastrobar and chef miguel rebolledo broke the record for making the largest paella in the united states. the mega-meal was prepared in a 9-foot-wide pan and required more than 10 assistants, plus chef rebolledo to create.
the delicious paella, which featured more than 300 pounds of vegetables, 200 pounds of sofrito sauce, and 400 pounds of rice, was enjoyed by all the event participants. the feat was no simple matter, though. serving a paella of that size takes great skill and experience so that the flavor is not comprised when scaling up. according to chef rebolledo, the right amounts of salt and rice are just as key as the exact quantities of other ingredients used.
